Breakfast Burritos

  • 1/2 lb Italian sausage
  • 6 eggs, lightly beaten. (NEVER add milk to your scrambled eggs.  It makes them foamy.  Add 1tsp water or nothing at all.)
  • 1 can Rotel tomtaoes, drained
  • 2 cups Ore Ida Potato Crowns or tater tots
  • 8 oz shredded cheese
  • tortillas
  • sour cream

Preheat oven and bake potato crowns according to package directions.
Brown sausage.  Add Rotel and beaten eggs.  When eggs are cooked through, transfer sausage mixture to a serving dish

Top warmed tortillas with sausage mixture, potaotes, cheese and sour cream.  Add a little hot sauce if desired. (We add Taco Bell sauce!)
